Crabs and Other Seafood from The Northeast

Though we are from New York, while living in the Northeast we prefer seafood but in Maine we had to live up with crab cakes. It was wonderful! You haven’t tasted crab cakes until you get it from the source. Maine was in our thoughts when we got back home and we miss the crab cakes.

So, we decided to look up a crab recipe online. Now, that was hard. Most of the recipes were difficult and told us to buy a certain type of crab meat which was really expensive. I think we’ll have to go back to Maine soon. Crab soup: Ingredients 1/2 kg crab meat, cooked and flaked, cartilage removed 1-1/2 cup chicken stock 2 cups water 2-1/2 cups tomatoes, chopped 3/4 cup chopped celery 3/4 cup onion (chopped fine) 1 cup corn kernels 1 cup peas For Seasonings: 1 teaspoon seasoning (a dash paprika and celery) 1 bay leaf 1/4 tsp pepper 1 tsp lemon juice Method Put chicken stock, water, tomatoes, celery, onion, and seasonings in a vessel, and bring to a boil. Simmer for about 20-30 minutes. Add corn and peas. When cooking,simmer the meal until the corn is cooked and then heat the added crab meat until that is heated through. Remove bay leaf. Serve hot.
